Hawaiian Chicken

After a very cold Saturday, I jumped at the opportunity to grill on Sunday. The sky was clear, blue and not a cloud in the sky. Just perfect for grilling! I served this with a pineapple salsa. Purchase pineapple chunks in a can with 100% pineapple juice.

Chicken:
1/4 cup pineapple juice
2 tbsp ketchup
2 tbsp soy sauce
1 tsp ginger, minced
2 garlic cloves, minced
salt and pepper for seasoning.
boneless, skinless chicken breasts

Pineapple Salsa:
1 can of pineapple chunks (in 100% pineapple juice)
1/4 cup cilantro, minced
1/4 cup red onion, finely chopped
salt and pepper for seasoning

Combine pineapple juice, ketchup, soy sauce, ginger and garlic and mix well. Season with salt and pepper. Marinate chicken with this sauce for about an hour or longer if possible.

Combine pineapple chunks, cilantro and red onion. Mix well. Season with salt and pepper.

Pre-heat grill.

Grill chicken until completely cooked through. Serve with pineapple salsa and ENJOY!

Wine pairing.....Pinot Grigio or Cabernet Franc.
